Recipe: Falafel pita wrap

I love falafel sandwiches. Here is a recipe to make your own cucumber dill sauce to serve with your falafel. I could have made the falafel balls myself but I had already bought a package of pre-made ones. The great thing about this is that you can put anything you want in your pita pocket. I just put in my preferences but you can add olives, lettuce, hummus or cole slaw. This meal is filling but incredibly healthy - the veggies provide vitamins and other nutrients, the yogurt with calcium and probiotics, and the chickpeas have almost 20% of your daily fiber needs.

Ingredients

1 (6 ounce) container plain yogurt
1/2 cucumber - peeled, seeded, and finely chopped
1 teaspoon dried dill weed
salt and pepper to taste
1/4 teaspoon of lemon juice
1 tablespoon mayonnaise
1 package of Veggie Patch falafel chickpea balls
Pita bread
Tomatoes
Sprouts
Beets
Half a red onion, diced

Directions

For the sauce: combine yogurt, lemon juice, cucumber, dill, salt, pepper and mayonnaise. Chill for at least 30 minutes.

Fill a medium size pita pocket with falafel, tomato, sprouts, extra cucumbers, beats, onions, and sauce.
