Recipe: Summer Salad

Ignore the paper plate...still no dishes in the
new apartment yet.
It's been pretty hot in Williamsburg even as summer is drawing to a close. I stopped by Trader Joe's and picked up some items to make a summer salad. This is also gluten free! I've been trying GF eating this week.

Ingredients

1/4 cup of fat-free feta cheese
1 peach
1/2 ear of sweet corn
2 beets
5 heirloom tomatoes
1/2 red onion
2 tablespoons of olive oil
Kosher salt to taste

Directions

Combine all ingredients. Test the corn by tasting a kernal. If it's not sweet and tender then boil it for a few minutes before including in the salad.

The mixture of flavors is amazing. The sweetness of the peaches with the saltiness of the feta cheese is the perfect balance. Also, the crunch of the corn compliments the soft beets and peaches.
