Cake Batter Cookies

The finished product!
These cookies are SO good that they are like crack. And the great thing about them is that you can experiment with any cake batter you want.

Ingredients

1 box (18.25 oz) cake mix (I used Duncan Hines's white cake mix)
1 teaspoon baking powder
2 large eggs
1/3 cup canola oil
1/2 teaspoon vanilla extract
1 cup sprinkles

Directions

1) Heat oven to 350F. Line large baking sheet with parchment paper or grease liberally.

2) In a large bowl, mix together the cake mix and baking powder. Set aside. In a smaller bowl, whisk together the eggs, oil, and vanilla by hand. Add the egg mixture to the cake mixture and stir to form a dough. Stir until the balls of dry cake mix are gone. Gently mix in the sprinkles (I found that it was easier to mix the sprinkles into the dough by hand).

3) Drop rounded 1-inch balls of dough onto prepared baking sheet. Make sure the balls of dough are taller than they are wide so that they resemble little eggs.

4) Bake for 9 minutes – do not let the cookies get brown. They will be very soft at first. Transfer to a wire rack to cool completely.
