Granny smith apple pancakes

I was watching the new daytime talk/cooking show called "The Chew" with my dad and they showcased this recipe for fried green apple pancakes. This is a healthy fall breakfast and a really easy recipe! They will look like regular pancakes at first glance and then you bite into baked apple goodness.

Ingredients:

1 Cup Bisquick Baking Mix
1 Egg
1/2 Cup Milk
1 Teaspoon Pumpkin Pie Spice
Zest of 1/2 Lemon
2 Medium Apples pared and cored

Directions:

Step 1
Beat baking mix, egg and milk until smooth. Add pumpkin pie spice and lemon zest to batter and mix until incorporated.

Step 2
Grease griddle.

Step 3
Core and cut apples crosswise in 1/8-inch slices.


Step 4
Using a toothpick (or a fork) dip slices into batter. Cook on hot griddle until golden brown, turning once. Serve hot with maple syrup.


The result:


Tip from Debbie: Dip the apples in dry batter before the wet batter, it helps the wet batter stick to the apple!
